This wine is made entirely from William Fèvre's estate parcels, managed organically since 2000. Grown from 38 hectares mostly adjacent to Premier Cru vineyards, it ages for 10-12 months in almost all stainless steel, with 5-10% aging in old French oak barrels for 5-6 months. William Fèvre Saint-Bris is a unique Burgundian white wine made from Sauvignon Blanc, the only appellation in the region permitted to use this grape. It is grown in vineyards southwest of Chablis on a mix of limestone and clay-silt soils, which contribute to its distinct mineral character. The wine features an intense bouquet of blackcurrant bud, boxwood, and citrus zest, leading to a fresh and round palate with exquisite lightness. To preserve its crispness and varietal typicity, it is fermented with native yeasts and aged for 8 to 10 months in stainless steel tanks.
