Pomace olive oil is a lower-grade oil extracted from the leftover pulp, skins, and pits of olives after the first pressing. Because only a small amount of oil remains in the residue, it is typically extracted using chemical solvents like hexane and then refined through high-heat processes to make it fit for consumption. The resulting oil has a neutral flavor, a light color, and a high smoke point (up to 490°F), making it a cost-effective and stable option for high-heat cooking, frying, baking, and industrial uses like soap making. While it retains the monounsaturated fatty acid profile of higher-grade olive oils, it lacks the robust flavor, aroma, and high antioxidant content of extra virgin olive oil.
